Our Story

It started at a grill, not a boardroom.

For Eddie Ray, the spark for Charcoda was ignited around his grill and at the family dinner table. While his wife, Diana, enjoyed working in the kitchen, Eddie Ray found his passion at the grill. Their children grew up watching their parents work together, turning what many consider a daily chore into a lifelong craft.

After decades of owning a custom wood molding business, Eddie Ray decided to pursue his lifelong passion for barbecue. What began as a modest idea for a small rib shack quickly evolved into something much greater: a barbecue destination with a distinctive old-fashioned Western storefront.

“Char” pays homage to the grilling process. “Coda” represents the finishing touch — the final detail that transforms something good into something unforgettable.

While mass-scale barbecue can be known for cutting corners or sacrificing flavor, Charcoda is intentional about preserving the artisanal quality of the meat through perfected slow-cooking methods. We never shortcut the process, because shortcutting the process is shortcutting the flavor. We use specialized Southern Pride smokers that add moisture through a convection effect, resulting in a “melt-in-your-mouth” product. When we use phrases like “five-star” and “top-notch” we really mean it.

While barbecue is notoriously slow to prepare, we want to buck against the trend of long wait times. Slow-cooked meat plated at fast-food speed doesn’t have to be an anomaly. Our methods help serve people with short wait times while maintaining the juice and texture that barbecue lovers so appreciate.

In a food market where many restaurants overcharge for small portions, we’re not out to nickel and dime you. We aim to be a family-friendly restaurant, therefore, affordability is top-of-mind.

We operate under the conviction that any guest should be able to peek into any corner of the kitchen and feel good about what they see. We see cleanliness as an integral part of running a top-tier restaurant. While barbecue joints have a reputation for interior pits, walls, and smokers accumulating heavy layers of soot and grease, we aim to debunk the myth that decades-old smoke buildup contributes depth and character to the meat. Our standards include consistent deep cleaning, the use of gloves, and an open-kitchen philosophy.

We are a local, Amish-owned restaurant committed to serving real food. We prioritize wholesome ingredients without the additives found in commercial industries. The chief aim of our restaurant is not to invest in a capitalistic venture; it is to serve and delight people.
